We work with farmers who raise the animals on pasture, feed them a non-GMO and vegetarian diet, never give the animals any kind of growth hormone or antibiotics, and give them a happy life.
We use quality spices and ingredients, all-natural beef and hog casings, and cure our products naturally. Each item is hand-tied, slow-fermented, and slow dried to create maximum depth of flavor before we hand package each one.
Every step of the way is artisanal because we’re not in a hurry to make our products with giant machinery or shortcuts. The longer it takes, the better the end product!
Our facility is in the small town of Basalt, Colorado, nestled in the mountains of the Roaring Fork Valley between Aspen & Glenwood Springs. We are very much involved in the food community here with ties to Rock Bottom Ranch, restaurants, and markets like Meat & Cheese in Aspen.
