il porcellino salumi opened its doors in October 2015 to high praise from Denver residents and local media and has been slowly building up its business as not only Denver’s best sandwich shop and first and only Salumeria, but now as a fresh butcher shop offering the best locally sourced steaks, colossal pork chops, and house made sausage in the city of Denver. If you’re in the Berkeley neighborhood, stop by for a delicious sandwich that will knock your socks off... And take home a ribeye steak or house made kielbasa sausage to grill for dinner. Maybe a slice of Head Cheese or Rillette for an appetizer, or our winning recipe Spiced Juniper Salami. Il porcellino salumi has received many accolades along the way, including Best New Deli in Denver 2015, Best Sandwich Shop in Denver 2016, 2 Good Food Awards in 2017, and the Grand Champion of Charcuterie Masters in New York City in 2018. 

Spreading Our Wings

In Spring 2018, il porcellino wholesale was born in the small town of Basalt. Nestled in the mountains between Aspen and Glenwood Springs, our small USDA inspected wholesale facility is currently cranking out small, artisanal batches of our award winning salumi for distribution around the country. Made at 6600 feet above sea level, our new “High Country Salami” line of products were released for distribution in early Summer 2018. An extension of what began at the retail store, il porcellino wholesale allows the business to produce its award winning salumi under USDA inspection so that the products can now be sold business to business not only in Colorado, but also across the entire country. You can now find our salami in many retail stores and specialty markets around the country. Businesses that mimic our beliefs in how we source ingredients and how we shorten the supply chain to the consumer. Chefs that hold our ideals true to their heart use our salumi on charcuterie boards all over Colorado and beyond at some of the best restaurants around.

A Glimpse into the Future

As the business continues to grow and evolve, plans are in place for more retail locations around Colorado. The wholesale facility in Basalt is set to expand in early 2019 as the demand for our products continues to grow. With the addition of whole muscle products like our award winning Coppa, Wagyu Beef Braseola, Lonza, Lomo, Speck and Culatello, the business will expand its product line in 2019. Beyond that, our plans include the addition of cooked products like our Summer Sausage, Mortadella, Berkeley Ham, and of course, our signature Maple Cured Bacon!! A provisions division of the company is also in the works, and will include products like our Pickled Mustard Seeds, Spicy Jicama, Juniper Cauliflower, and Sweet N Sour Kohlrabi. The goal of the company is to create a brand that not only Colorado consumers can be proud of, but families across the country will know our name and seek out our ethically sourced and responsibly made products. The future is bright for il porcellino!
